


Intro to Herbalism Series: Spring in Appalachia - Oxymels, Vinegars, and Springtime Salads
Saturday May 3, 11am-2pm
Come activate your senses in a Springtime wonderland. Through scents, stories, and flavors galore, we will deep dive with dandelions, learn the ins and outs of the herbal preparations of oxymels and herbal vinegars, nosh on a salad of foraged finds, and explore language to express the way the plants resonate within us.
You can expect to depart the class feeling excited and prepared to make your own oxymels and infused vinegars, identify native edible plants that work well in a nourishing springtime salad, and care for your body with springtime remedies and rituals.
We will take a tour of the digestive and lymphatic systems of the body, two systems that are highlighted this time of year, drawing parallels between their processes and the herbal actions of springtime emergent plants. This includes exploring not only an intellectual understanding of these body systems, but how to feel into them, check on their vital function status, communicate with them, and identify signs and symptoms that they are doing well or in need of specific supports. In addition to herbal allies that support these systems, Allie and Katie will demonstrate and provide advice on routine care strategies to keep these body systems humming along, from physical movement to lifestyle practices.
In addition to vinegars and oxymels, we’ll include a teaser on tinctures to get you geared up for our summer class and show you a preparation method that you can start playing with at home.
At the end of class you will take home jars of a vinegar preparation, an oxymel, a dandelion monograph, a belly full of spring greens, and a body humming with benefits from digestive and lymphatic cleansing and maintenance.
Please wear weather-appropriate clothing and sun protection (some of our class will include walking about foraging), bring a full water bottle and any snacks to keep you content, and also bring a notebook and writing utensil.
